Googled lasagna quotes and found this —> “I never met a lasagna I didn’t like”, and you know what, It’s sooo true! Best of all, a lasagna works as comfort food during rough times, and at the same time it also works as a classy high end dish at a 5 star restaurant. Hard to beat, that one is!

I’ve eaten a lot of lasagna during my little life on this earth, but none of them was as good as the one I had in Sicily (Sis you know which one I’m talking about), therefore I have chosen not to try to replicate that one. Instead I’ve chosen to try a vegetarian recipe for this weeks post. You vant really get the Sicilian sun and aromas here in Sweden. But back to the veggie lasagna, “This one wasn’t too shabby if you know what I mean!

Okey so here’s what you need!

a bunch of sweet cherry tomatoes, a carrot, a couple of mushrooms, frozen spinach, some garlic, 1 onion, crushed tomatoes, a squash, lasagna noodles, Feta/mozzarella and/or parmesan cheese and some fresh basil.

add the crushed tomatoes or your favourite tomato sauce + some cherry tomatoes  DSC_4660 DSC_4670

boil then let simmer for about 20 minDSC_4673

meanwhile start with the first noodle layer in a pan

chop some mushrooms and slice the squash, add the mushrooms to the sauce and make an other layer with the squash on top of the noodles. DSC_4676

Start the layering!
